Frito Corn Salad

 



My daughter and I love this dish. It is easy to prepare and is amazing all year round, but especially during those hot summer months when I don't feel like turning on the stove. 

Ingredients: 

-    1 can of sweet corn drained 

-    1 can of black beans rinsed and drained 

-    1 can of diced tomatoes with green chilies (I prefer Rotel with cilantro and lime juice added) 

-    1 red bell pepper, diced 

-    ¼-½ cup of mayonnaise or sour cream (can also do half mayo and half sour cream) 

-    Fritos (I like either original Fritos or Chili Cheese Fritos) 

-    Optional: Shredded cheese 

 

Directions: 


1. Clean and chop or dice the bell pepper and place into a large bowl. 

2. Open the cans of corn and black beans. Drain each and rinse. Add corn and black beans to the bowl with the bell pepper. 

3. Open the can of tomatoes and add to the bowl.  

4. Add mayo and/or sour cream to the bowl. Add enough to reach your desired consistency. 

5. If desired, add in shredded cheese to taste. 

6. Place in the refrigerator and allow to set for at least an hour before serving. 

7. When ready to serve, top with Fritos. Nobody likes soggy Fritos.
